(Like others have mentioned in this thread) Use your thumb to make depression in the center of the burgers before you put them on the grill.
This will keep them from puffing up like a big fat wellfare burger.
think you can maybe see a depression in th 6 oclock position burger below...

Primo makes a ceramic cooker similar to BGE at a lower price (i believe), but I have never cooked on one to compare the two ... I can't imagine there'd be that much difference. Kamado makes a ceramic cooker that can cost alot more than the BGE. I have two eggs and cant find much to complain...

Here is a shot of a Pampered Chef stone. I have it set on top of a diverter to keep it from direct flame conctact as stated above. The pizza is a pre made el cheapo kit and taste 10x better when cooked over hot coals. I like the idea about the kiln shelf ... I will be keeping an eye out for one...
I have been looking on Craigslist for a concession trailer and have been amazed at the folks that dont have a titled trailer .... "it didn't come with one" or "it's lost" ... I guess people fall for this. I am glad Jeff allowed you to put the word out here ... shows that people can work...
I am a believer in the homemade stock as well. I have never tried to add a smoky bone because my son wouldn't let me at them! It couldn't hurt to throw one in the pot and gauge it from there ... It sounds good, please let us know if you try it.
I did a quick google search and didn't find any cast iron for $30 at the Depot. Can you shoot me a pic or picture out of curiosity? FWIW, I 'season' any cast iron I get ... even if it is 'pre seasoned' I don't see how it could hurt anything. I have some Lodge pre seasoned pans and Cabelas...
