    Trying again… brisket going in.

Maybe nothing . Start by making sure you're slicing across the grain , if you haven't already . Could be the brisket itself . I stay away from the long hold needs to be done theory . I tried it , twice , and I'm not saying it doesn't work for people , but it didn't work for me . Came out dry...

    leggs anyone?

The Leggs is pretty spot on , but still subject to personal taste . I have some from Adkins that's salty per the directions , but some breakfast sausage is like that . I cut it back some . Most of these commercial seasonings are formulated at 1 TBLS per pound of grind . Usually a safe place to...

    Trying again… brisket going in.

It did , but doesn't always . If you're forcing it to finish , leave a therm inserted , and watch the temp rise . Cycle the oven off and on as needed . That's just where I landed after doing a few . Once I had the same results 5 times in a row , that's how I do them all . Yours is looking...

    Trying again… brisket going in.

Lmao! That’s what we said when I read the reply about checking it. We both said, won’t that let a lot of heat out and take like 40 min to fully recover? 😂we just decided we’re gonna leave it til 175 then wrap it and put it in the oven to finish. Good plan . Also your temp is good . If you...

    Trying again… brisket going in.

I've pulled them with wet bark . No issues , but I do an oven finish . Either forced to temp / tender , or as a holding spot . Stay with the plan and advice and see what adjustments you want to make next time if any . I agree with Keith though . I stopped wrapping all together , but if I do I go...

    Trying again… brisket going in.

You're gonna need to do a few and figure out what works for you , but yes , it's stops the rise in temp , and helps to avoid over cooking . Just stay with what you have going now , follow Matts advice , and worry about next time , next time . I do a different method , but you don't need to...

I don't do the cooler rest , but let the temp of the brisket start to drop before the cooler hold .
