How much Charcoal do you use?

Ok before the smoker goes over the hill!! How much charcoal do you use on an overnight smoke of brisket. I threw a 12lb packer in a 10 last night and now at 1PM it is just about done. I used a 20lb bag of kingsford and a 12 lb bag of Stubbs lump I found at Lowes. 30lbs of charcoal just seems...

    Where to find better Charcoal?

Was thinking the same. I typically use Kingsford because Lowes around memorial day and the 4th have the two 20lb bags for $12 this year. I am doing a brisket and tried a bag of Stubbs Natural lump, I found at lowes. I wasn't impressed. I have tried the cheap wal-mart brand and ddin't like that...

    July 4th Smokeouts

Heading to a buddies at 5 tomorrow night for the fourth. Prepped the brisket last night. Just started the smoker and am waiting to get it up to temp. Trying Stubby's lump coal and some pecan wood. Should have the brisket in the smoker in a half hour or so.

I would have loved to come as it's only an HR and a half  up 85 from me. I unfortunately will be smoking here as it is the inlaws 50th anniversary and they will be in town and want a family get together.

Smokin Away A Saturday Pics to follow

Decided instead of hitting the local watering hole for Sat evening to do a little smokin'.  Picked up some ribs and a whole chicken. Well picked up enough ribs for an army. Command central is up and running, ribs on both smokers and the chicken (beer can) is on the grill. Only cloud here in the...

    Urgent Beer Can Help

Looks great. I have used soda and beer when I have done them. I have not noticed any flavor change regardless of what I use. The can and liquid just steams up and evaporates in the cavity. I typically just find the cheapest beer I can find and buy a 12 pack. That way I always have a few cans...

    Smokefest Since 1 AM

Thanks Al. The venison jerkey was half great and half junk!! I had it on the top rack of the verticle and moved it down lower when I was waiting on the brisket to finish up. 1/2 of it was like charcoal!!. Should have left it higher. Still learning with the vertical. Wife made a great comment...

    Smokefest Since 1 AM

Everything came out great. Forgot to take a pic last night of the brisket so I took one of the leftover this morning. Ribs fell off the bone. Brisket was tender as could be. Brought it up to 195 and foil wrapped and in the cooler for an hour before serving.
