Most people use Hickory on pork, Apple is seen more as a chicken wood. Apple is good on ribs, I normaly use an Apple/Maple mix because that is what grows around here.

What your dad said seems right. Instead of putting the woodchips right on the metal try cutting a coffee can down and drilling some small holes around it to allow airflow. After you have seasoned it fire it back up without meat and test it out with the water pan on the second rack.

Hey steve I dont really know anything about building smokers but that fire box looks mighty large for the tank. How did you come with how big it should be or did you just eyeball it? I have to head down to my dump see if I can find something in there to play with.
