    Pork Rib and Chicken Thighs

Most people use Hickory on pork, Apple is seen more as a chicken wood. Apple is good on ribs, I normaly use an Apple/Maple mix because that is what grows around here.

    A Real Beginner

Welcome to the SMF. Like the others I also only seasoned my beast once. I would only season it again if you havnt used it for a long period of time. Like if you didnt smoke all winter might be a good idea to get her good and hot to burn off any critters that might have moved in.

    Stalled still?

Temp is the best way to tell when its done. A good way to tell just how close to finished the meat is cooking is to give the bone just a little pull. If it comes right out clean, no meat sticking at all and with very little to no resistance its very close. Also I have never seen the meat pull...

    New here

What your dad said seems right. Instead of putting the woodchips right on the metal try cutting a coffee can down and drilling some small holes around it to allow airflow. After you have seasoned it fire it back up without meat and test it out with the water pan on the second rack.

If you are looking for a good rib rub and BBQ sauce go ahead and spend the small amount of money and buy jeffs. The link is on the top right of the page. I no longer use anything else on ribs and the sauce is amazing and can be easily be changed to taste. As for butts most of the time I use a...

Welcome to the SMF. I also don't really know much about electric smokers but im gonna guess you have it set up right. Looking at the pics I can't think of anything else that could be used for. Does the water pan make contact with the heating element without the stand? I would take a wire bursh...
