My first shot at Briskets. I have 2- 6lbs briskets. I am going to use Jeff's Texas rub. This will be my first time smoking any beef. I do lots of chicken, turkey, and pork. Thinking about starting it around 4AM.
Wow! I love it. A work of art. I was a machinist when I was young, and I play with welding little. It is so cool seeing other peoples designs. Yes, that stainless warps very easily. I can't wait to see the finished work smoking away.
I am new to the cold smoking cheese. I have done 4 batches this year. Next Friday is my last until next fall. Since I am still in the learning mode, I am varying parameters a little. The second batch I did set out for about 6 hours and then I put it in the fridge. I got busy the next day and...
I checked it out. Blaze Grills founded in 2012, out of Louisiana. The owner actually started back in 1998, and struggled. He worked with Ironworks with designs back around 2000. He started and internet sales company to move his and other people products (Shoppers Choice now BBQguys). Blaze...
JohnMeyer,
I live about 110 miles from Portland, Oregon. I decided while I was up there for other reasons that I would stop in at 2 BBQ stores. The first place had Yoders. OH MY, I was about to slap down the credit card but I figured that both me and the grill would have to live in the dog...
Welcome from Oregon. I just retired my smoke vault last September after 15 years. I learned to cook a few things really well. I am no help either on a stick burner. I built my own 240V smoker out of a fridge. I have had so much fun the last nine months, it opened a whole new world in smoking...
Chicken breast stuffed with swiss and cheddar cheese, Jalapeño, and mushroom. Then the breasts will be wrapped in bacon. Smoked the Hickory/mesquite and finished braise with devils spit BBQ sauce.
John,
That is interesting. There were not many reviews on the weber web pages but a significant amount of them talk about rust. Hopefully they have fixed the problem. I too will check back as I get closer to making the decision to put the old genesis down, or rebuild her for another life.
I looked online at the Weber Summit stainless steel grills. Lots of comments about the Stainless steel rusting, and all of the regular steel parts. Even people with a cover and storing it under an awning had problems with rust. Information on the dials were also rubbing off. People love the way...
I am in the same boat as you. I have and 19 year old weber genesis, that we have replaced 2 ignitors, 3 sets of flavorizer bars, grates, and one set of tubes. She has been a faithful grill, and is still working. I replace the igniter yesterday and noticed that the center tube might make it 2...
Well I have a strange illness, Meniere's disease, I am getting random severe Vertigo. The doc want me to go on a low salt diet, 1500mg or less a day, and no Caffeine. Wow, This will be a drastic change.
We have our 10 different coffee beans flavors that we rotate through day by day. I have been...
Dave, Thanks for the story! As a RN, I have get the fortune to clean up such messes, I am not minimum wage though. I admire your strength to clean such a mess, and actually tell people about it!
I have been using Lumberjack pecan, mesquite, maple, and hickory here in the wet lands of Oregon. Rained 1.3" today, 2.3" tomorrow. We will have had 2 days in 2 weeks by the time we get to next Friday. I Bought my pellets in late August last year. I have been sealing my pellets in 5gallon...
That cool, I have never tried using chips in my ANMPS, I have only used pellets. I tried using ANMPS/tube in the smoker with higher temps (400 degrees) this week; trying to figure out how to do a pizza with good smoke flavor and still keep the temps up. My pellets kept going out. I think my...
We did the largest batch so far in the newish smoker. About 4 months ago I tried Pork ribs for the first time on the new smoker and they just did come out the way I liked them. After playing with the smoker and having several great successes, I decided to make a bunch of pork. We made 35 lbs of...
