    Sometimes we fail.

Almost every time I smoke I learn something. I find better ways of do things and a lot of what not to do. Cheap meat is not as heart breaking as spending $50-$70 and prepping for a couple of days, only to screw to up. You had 2 weeks invested in this smoke. I figure this smoking stuff is a...

    Fatties: 1st Aniversary

We celebrated the first aniversary of cooking on my fridge smoker. I decided to make fatties for the first time. I can only smoke every other weekend due to my work schedule. The last year has been so much fun. My wife helps me in the kitchen, and I do the research, recipes, buying the food and...

Help. Yoder YS640 vs Rec Tec 700

Yea, I have a good friend with a 9 month old Traeger that they had a back burn a toasted the controller. Had to wait a month for replacement parts.I know the Yoder and Rec Tec is in a different class of pellet grills than Traeger. I like the idea of a center pot directing heat equally around...

    BBQ Grill to Electric Smoker

I personally like the Cast iron better. I would look for skillets, or one large flat pan. Anodizing is a really hard material, but can start slowly degrade at higher temps 700 °F-800 °F. If you need more smoke at lower temps you could drill a few 1/4 holes around the base, otherwise just just...

    Mailbox Mod

You will love it for cheese. Or getting that extra smoke flavor in the winter. My mailbox raises the temp in my fridge 5 degrees over ambient in the winter. It is awesome.

    So this just happened....

That is sad. I think each of us gets a little attached to our smoker. Then I also want what ever I buy to last forever.

    Cherry vs Apple

I am fairly new to using different type woods to smoke with. Traditionally I have used mesquite/ hickory with my smokes. During the last year with my new electric fridge smoker and 2 oval AMNTS and an AMNPS I have tried corn cob pellets, Lumber Jack pellets (mesquite, hickory, pecan, maple) and...

Just little nutty (Pecans and almonds)

We spaced out and did not get the almonds into jar, so they sat overnight. The almonds with the bacon grease base got soft and gooie. Puy them in the oven at 170 degrees for 1/2 hour and it dried them out. Let set for 4 hours and canned. I tried a few and they tasted good.
