    Apple cider vinegar

Vinegar will keep fine opened for a long time. I have some currently that is over a year old that has been opened. Now with regular apple cider that is non-pasteurized I could see that going south and becoming vinegar

Want to get into the smoking game!!!

My advice for your price range buying new, would be a Weber 22" kettle grill. You can grill and smoke with one. Otherwise I would suggest stepping up to something in the $300 range, as a lot of the super cheap smokers are that for a reason. They don't run well and are very thin. I bought my...

In Search Of WSM Smoker Jacket

A word to the wise about welding blankets... The junk ones are woven fiberglass and aside from liking to shed like golden retriever, they make you itch like crazy.

    St. Louis Pork Ribs

if you want step by step instructions with pictures, get the Franklin BBQ book. It's a good read and Arron Franklin is a BBQ nerd, he know's his stuff and his show that was on PBS was meat porn through and through! When he pulled a brisket out and it jiggled like a set of boobies it's gotta be...

    Door straps

I would suggest that you take your material to a fab shop and have them roll it to a slightly tighter radius than what your tank is, this will help with spring back. Also when you tack, it will open up slightly due to the heat relaxing the form put into the metal from rolling. I wouldn't go...

    Locust, Black walnut, Beech

If the walnut has any size to it, sell if off to a lumber guy, save the locust for firewood. Smoke with the hickory.

Which woods give y’all the best smoke ring?

Smoke ring is a by product of the smoking process, which is affected by temperature, the amount of salt in a rub and how clean your fire is running. Now if using something like cherry wood, will give your food a slight reddish hue from the smoke, I like it for ribs mixed with hickory. Fruit...

    Jar storage

I use a old book self that was free along the road for my canned foods, but have bought Muscle rack shelving for pantry foods and for tool storage. They hold a lot of weight per shelf and are adjustable. Walmart has them the cheapest I've found, although they are rated for slightly less weight...

Meadow Creek bbq42 paint flaking and rust

Now your first post in complaining about the paint quality of this cooker... nothing is mentioned until your last post that you had bought your cooker second hand. Let's play the devil's advocate here and say maybe the first guy wanted it to look extra nice and decided to repaint it. Let's...

Secret to good skin in the smoker

Any time that I make yard bird, I have the grill (gas or charcoal) as part of the end game for crispy skin. When the skin is cooked correctly (think of road side chicken BBQ) that melts in your mouth.

    First time on charcoal

Do yourself a favor and buy a charcoal chimney (Weber makes a very nice one). They are great to get your charcoal roaring in very little and no more messing with lighter fluid. Another trick is if you have a side burner on your gas grill, take off the grate and put the chimney over it on high...

Roast Beef & Horseradish (Tear Jerker)

The wife makes sandwiches similar to these. She cooks the meat in french onion soup with some Worcestershire sauce. Then puts them on rolls with provolone cheese and bakes them enough to make the outside of the rolls crusty, then a squirt of horseradish sauce. They are a favorite in our...

    First Prime Rib

some ground horseradish and Au-jus on the side and you have beef heaven on a plate! I wanna make a prime rib as well, but my wife isn't a fan. I will have to plan a dinner party for some friends who it and make her some chicken.

    Epic Fail on Oklahoma Joe

Hello there, I have a Highland reverse model and can tell you some of the things I have done to help me. 1. Take your fire grate and spin it 90 degrees, this will raise it about 2" and give you greater airflow to your fire. 2. This is the one that made the biggest difference for me. I made...

Favorite beer while smoking and/or eating BBQ?

Sounds like your state legislator is run by Mennonites kinda like PA. We have of recent now been able to buy beer at the grocery stores. I like Maine, you can go to the grocery store or walmart and buy beer, wine or liquor, no stopping at a special store to buy those items.

Favorite beer while smoking and/or eating BBQ?

Yuengling is made like 2.5 hours from me. It's alright.. I drink it when I'm feeling cheap as it's usually like $2.50 a pint during a happy hour. Premium is coal country beer 100% and gross! Their porter is pretty good. It is cool that they are a very old long lasting brewery as very many...

    Clean Burn ?

toss in your charcoal and let the smoker come up to temp, while this is happening have a few pieces of wood laying on the fire box to warm/ dry it out. I personally like the western mini splits because they are nice and dry and bug free. I keep it in the shed to stay dry. I built a wood shed...

Favorite beer while smoking and/or eating BBQ?

I like IPAs just fine, not while cooking on the smoker and not more than 2 in a row. They are just too heavy of a beer and don't go well with BBQ. I gravitate toward pilsners or lagers while cooking on the smoker and after eating maybe a bourbon or two. On a long cook strong beers can result...

    MakinStacks Smoke - First build

I would suggest Cera-wool, it might not be cheap, but is made for high heat and won't degrade. I have worked on coffee roasters for a major coffee producer (the one starting with an "S") and that's what's in them. They run them hot let me tell you.
