    S/S and heat don't mix, unless you use something like 309 (it will rust, high carbon content) or 310 which is ridiculous expensive. Good old steel and grease will keep your stuff from rusting along with proper cleaning.

    I wish more small breweries would be into making lager beers. But they take more time and if not make right can't be hidden with a pile of hops to cover up mistakes. But I sure do enjoy Helles and Kolsch beers in the summer for sure. Sly fox, Troegs, Appalachian all make very good examples...

    bring it to a boil and then let cool. You will have killed out the bad stuff and it will be safe to use. I personally don't add liquid just spritz them down so they are moist and foil with honey and brown sugar. There will be plenty of fat that renders out to keep them moist.

    I too would go with 2-3 smaller birds. Big birds aren't good to cook except for turkey soup. I would check out the pellet grill, at the current prices I might have to pick one up as well.

    Your plenum looks real good. I would advise away from a top lid in the fire box and go with a door on the end. You'll loose a lot of heat every time you open the fire box with a top lid. Depending on where your from insulating the firebox isn't a bad idea.
