    Slather some mustard on that S.O.B. before the rub, and smoke, I usually wait to mop or spritz until 2 or three hours of smoke has hit it too. Is slather a word or did I just make up some new english too?

    It is a gas smoker, and the pizza sauce is just spread on when the sausage is rolled out and then I put more on it after they were rolled, erain your right on the money. I recommend these to anybody they are awesome!

    I have always soaked even if it was for only 30 minutes, and I get nice looking thin smoke.     I was just useing the gauge on the smoker, and I have just one of the thermometers that you stick in the meat and the dial raises to what the temp is. Nothing digital or anything.

    I am using the GOSM, and I was planning on doing the loin slow, So I think I am going to do beer can chickens on a seperate grill right over the coals, unless with the beer cans I can cook the birds at 225 with the loin?
