    Head Country Question

I LOVE Head Country! I usually make my own sauce but a lot of times I will use this on chops, chickens and my pulled pork. Excellent rub as well!

    Fell asleep at the smoker!

I think the first 1/2 inch got there....I had the fire going at 260* when I laid down and had some soaked hickory chunks and they always catch fire in this piece of junk Brinkmann SNP so I'm sure I was going hot for the first 2-3 hours that I was asleep.  Thank you very much gentlemen for the...

    Fell asleep at the smoker!

Well I actually fell asleep on the couch while my smoker was going!  I intended to take a little nap and wake up every couple hours or so when my "trusty" Maverick fell below 220*, but the alarm didn't go off....probably operator error.  Anyways, I put my 2 whole shoulders (bone in) in at 12:30...

Sounds like you have the same smoker that I do.  I have a Brinkmann Smoke n Pit and I ALWAYS  have to start my fuel in a seperate chimney.  I was having the same problem that you are until I started this process.  But that's what I stuck with until my 1 year old starts costing less! hahahaha ...

Thanks guys, It was an awesome price so I bought two of em! Essentially I have 12 lbs of pork chops for 12 bucks! I'm just not sure how high of a smoker temp to cook the darn thing as well as the IT! I'm gonna start it in the morning and I have it chilling overnight in a modified version of...

    Pork loin rib roast

Hey folks, I picked up this beast a few days ago at a local grocery store for .99 per pound and it weighs right at 12 lbs. The butcher was already gone for the day so I couldn't have him split it for me.  I looked around on here but nobody really said how long it should take.  Should I go with...
