starting to look for a higher end offset smoker

I bought a CharGriller side by side last year to get a feel for it, I love the style of smoker but hated the inefficiency and how much fuel I had to throw at it to work, I couldn't leave more than 5 min before having to check the temp in the smoke box, Bought a Yoder Cheyenne because I don't do...

    Yoder Cheyenne Diffuser Plate

4 1/2 hrs in, getting ready to rotate it so the left side gets some heat and more smoke, the drip pan underneath is causing an up draft so the right side of the butt is getting more heat and smoke, leaving the drip pan out next time.

leak between venturi and bottom of grill, repaired with gasket maker has now melted

Check with stores that sell wood burning stoves, they have gasket making material and sealing compounds that are designed for higher temps than the grill can achieve. You can check these places out also:  http://www.bbqgaskets.com/   http://www.bbqsmokermods.com/ http://www.stovegaskets.com/...

    Yoder Cheyenne Diffuser Plate

I've been playing with my Yoder with the diffuser plate in since I got it. I smoked up a 8 lb bone in Boston butt to make some shredded pork couple weeks ago and with the diffuser in it seems to take a larger fire and more fuel overall. Smoked a tri tip last nite without the diffuser and used...

    smoking a pork butt...

Came out ridiculously good..... very nice smoke and actually could use some salt even though I was heavy on the rub. The nice tub of smoky drippings I'm going to skim the fat and freeze to make some black bean chili later.

Thanks bauchjw, I always try to finish out my meat in smoker regardless but this is rare exception, got very late start on the smoker today, tomorrow is a new work day   and unexpectedly had a bunch of things thrown on my plate, my day started off relaxed and went sideways in a blink... I went...

I'm over 6 hrs in right now with IT at 151f. I want to finish it off wrapped in foil and I tried once in the past adding a mix of apple juice, apple cider vinegar and some rub for the soak. Came out horrible with the extra salt and cider vinegar. I was reading somewhere on here and cant find it...

    smoking a pork butt...

Thanks for the replies   I found my recipe binder, my wife put it with her recipe binders. In the past I've kept the smoker temp between 225-245f to accommodate temperature drift in my old cheap side by side, with the new Yoder I've had only +/- drift of 10 deg in over an hour, with the old...

    smoking a pork butt...

I picked up a bone in Boston butt today to smoke up in my side by side Yoder I bought a month ago to play around with it to dial in with some cheaper meats. I cant find my binder with recipes and notes :-( , I know to run the heat around 250f for the meat but cant remember if final internal meat...

Thanks, the heat is no problem dialing in with this baby, it's the smoke I have to work on. This thing is super effeciant with heat and smoke, but a little smoke goes a long ways. I backed off 10 fold with the smoke this round and barely made the threshold for smoked ribs vs OVER smoked bitter ribs
