come on now....you cant leave us hanging like that. No money shot? Was it juicy and tender and stuff...gosh...now I'm gonna have to cook one and find out.
Well done and hope you enjoyed it. Good things are going to be coming out of that smoker.
And by the way, welcome to the forum!
Cant wait to see the outcome. As a side note I have never brined my chicken before. I just put a very small amount of a spice and smoke it with alder at about 290*. If the skin is still a little rubbery I will kick the heat up or put it in the oven at 325* for a few minutes to crisp it up...
So I just found this thread cruising through the site. I was right were you are two years ago. I had always wanted to weld but didnt have anyone to lean on with that dream. I ended up going to the welding instructor at the community college night classes and just talked with him. Told him...
I am watching you! This is gonna be a fun one to track. I am also curious about that welder. I keep thinking I need to buy one but not sure I can afford to swing a big miller model. Dont forget lots of pictures and numbers for us leeches to use on our next build.
Good luck and happy smoking
If you are in the 2K range these are reverse flow type smokers. I have a very large reverse flow but you really don't need that unless you cater or have a huge family....the smaller patio size versions will work for most people.

Ok, so here comes the pep rally!
I had never welded or had any metal fab experience at all...
That being said, I 'audited' the local community college welding class and asked the instructor to show me how this model works cus that is what I can use.
I am now the proud owner of the Beast. a...
I have seen where someone found an old webber kettle and cut the top of the body off about 1 1/2" down and just slipped that on the top of the drum then the lid fits perfectly.if you have an old webber kettle around I would start there. Otherwise someone should be around soon to opine....
Good...
Welcome! First off, you should roll on over to Roll Call and give us an introduction. Your level of experience (there is no wrong answer) and you r equipment and where you are from. We like to know our neighbors.
Now on to your question. It depends on what you are using it for. If you are...
You toy with my emotions my friend....baby backs.....
enjoy the new machine. As a side note the AMNS or the AMNPS are a God send for cheeses and salt and oh yes I will even say boiled eggs because there is virtually NO HEAT generated from it. Plus it adds smoke for those long long nights. I...
It looks remarkably like the one about to retire...
I would make it close to the same as the first one, since you are used to how it works. But I am pretty lazy....
So it sounds like you made them stuffed and then froze them right away? How long before they were frozen? I was under the impression that the cure did do its work in very low temps? Maybe someone else can chime in and give a better answer. It sounds like there are a few variable we still need...
Not sure what to say. First thing is make sure that it is level. What type do you have? The model also would be helpful and maybe some pictures of the issue. Is the drain in the middle or on one side of the smoker? I would just be leery of banging on a new unit when you could tip it ever so...
