    Hey, brother. This happens to everyone sooner or later.  Yeah, the family unit needs to eat, but I personally think your brisket will be fine, if you simply finish your cook.

    Pineview, if it were me I'd just ride it out till you hit an IT of 203. Some chunks of beast can be tricksy. I think you'll be fine.

    My first attempt at smoked cheese.

    Well, so good so far. I'm going to leave this on till around 5 or so. Both the pepper jack and cheddar are taking on a real nice color. Also, these pellets put out a nice amount of smoke and its clean.  So far the interior temp of the kamodo has stayed in the upper 70's.

     You're probably right, Atomic. I would think some time at 350 or there abouts should kill any bad stuff.

    IIRC, aren't there types of bacteria that live just under the surface of the vast salt flats out west? Might not be relevant here, just sayin.
