    Ol beer in the rear chicken

    Just wondered, I have heard of people putting apple juice in the water pan etc. I've not messed with it enough yet to know if that will affect the flavor or not.

    Skin was not edible. We don't eat it anyway, but it was pretty tough. On a side note, I did use the juices from the pan to make gravy and it was terriffic!

    I did brine it, overnight in just a saltwater brine. I used apple wood. Thank you! I was pretty darn happy with how it turned out. Kept it at 250ish for around 6.5-7 hrs. It was right around 11-12 lbs.

    It turned out great! The juiciest turkey I've ever eaten! I cut up an onion and an apple and put it inside. I cut up a stick of butter and put the pats up under the skin.

    Thank you for the article, Scooter, very helpful. I've never given much thought to alot of the science of all that. Makes perfectly good sense. I wonder if putting beer in the water pan will give it any different flavor or just waste a good beer. Part of the fun will be figuring that out!

    I am going to wrap a chicken in bacon and give it the ol beer in the rear treatment. I have a couple questions, 1. Will this work good in the smoker or should I use my charcoal grill? 2. What is the best beer to use (for cooking, )?

    Aged Smoked Cheese

    That looks great nepas! What temp do you smoke it at? I've seen posts on here where folks have used ice and such to keep the temp low.
