    First "Successful" Brisket

I say "successful" in quotes as I deemed it a success along with everyone else. Normally you always get the "tasted good" or "good job" even when it's slightly dry or too tender/crumbly. So I've made a handful of briskets, but not too many over the years. I was always intimidated by the meat...

    Pork Belly Burnt Ends

1 hour in the tray with the sugar bomb mix I’ll call it lol. Then I put a mix of my sauces on top. About 3/4 of the sauce was my ketchup based sweet and smoky sauce and 1/4 of it was my vinegar based tangy sauce. Back on to the smoker for 20 minutes to set the sauce up and now resting in the...

    Lang Clone Complete

I’m looking forward to personally cooking on it this weekend. Father in law has never attempted to BBQ anything before so I’d say he had good first luck.

    Lang Clone Complete

Thanks! I started with asking myself “What size smoker would I like to have for entertaining, yet not too big for cooking on at home”. I went with the Lang 48 as a guide. I just eyeballed/guessed on some items like the upper cooking grate height, how dare the fire box was insert into the...

    Lang Clone Complete

My father in law did the first run on the clone. He only sent me snapchat pictures but he ended up making salmon. They dry brined it for the morning and then threw it on about 4 hours at 180-190 and glazed it with an apricot jam the last 30 minutes. He said it was quite windy there but was able...

First Beef Ribs and Police Pursuit!

The suspect bailed and they tracked him via dog. The dog found the kids keys and wallet. He’s a student at the local high school. If he hasn’t been caught yet, he will be. He was fleeing for domestic assault and now he has a hit and run charge as well as eluding.
