thanks guys, not sure about the cheese loss..when I cut it in half to take pics, didn't see any cheese there. It was a very basic fattie for my first try:
scrambled eggs, onion,bell pepper,mushrooms & sharp chedder.
Here is my first attempt at doin a Fattie:
rolled,wrapped,seasoned & ready to smoke
into the smoker she goes
pulled off smoker @175*...maybe too long, lost most of my cheese
guess it's ok for my first one

Vern, welcome to SMF. There are so many good,friendly people here with the best advice on anything that you would ever want to know about smoking, it is unreal. I learn something every day.
Do they sell Jim Beam 7 year old anywhere else in the country besides here in Tennessee? I've been to several other states but none of them sell it. Guess it's because of Jack Daniels No.7. Anyways, I drink Jim 7 year old.
I am doing my first smoke right now & I'm only seeing a + or - 3* between the built in temp probe and my et-73 probe which I have on the 3rd rack on left side. This is without a baffle, so I guess all is well. Hope to have some Qview later on.

Demo's has some pretty good steaks. There are a few more upscale steakhouses if you prefer, but Demo's has a killer bacon wrapped fillet. I heard that Neeleys opened up a BBQ joint in Nashville but I haven't been there yet.
I bought the 40" 1200watt w/window this past Friday at Sams. Can't say yet as to whether I like it or not. Planning on doing a smoke this weekend. Will post some Qview.
