I'm glad that "approximate" was mentioned. I seem to have a stall at about 160F internal with the offset. I always go by internal temps and shoot for 198F to 205F. I don't seem to have that issue with the BGE, but I usually cook butts in it for Cochinita Pibil or Cuban style pork roast, neither...
This was my first experience using the rotisserie basket and roasting chilis in it. There was a learning curve as with most new equipment. I started out with a 2 zone fire, using charcoal baskets on each side of the rotisserie. I fired one chimney of charcoal and divided it between the 2...
In several years of searching locally for guanciale, we decided to make our own. We saw that a producer of heritage pork vended at a local farmer's market on weekends. We special ordered some Berkshire hog jowl and picked it up at the market. Being our first time going to the market, we didn't...
Here is the fatty cut in half.
The bacon was thin sliced. I used the same for the ABTs that went with the fatty. I like my ABTs done vertical. The fatty and ABTs were done on my BGE using cherry chunks.
Looks fantastic! Not smoked, but have you ever made "collard rolls"? Same as cabbage rolls, but using collards stuffed with jambalaya or dirty rice and cooked in a spicy Creole sauce.
I decided to make my first fatty. It is Jimmy Deans original bulk sausage, filled with homemade, bulk andouille sausage (unsmoked), homemade boudin, Cajun "Trinity" (sauteed and cooled) and cojita cheese. I have dubbed it the "Cajun Hog Log".
By accident, I discovered that our local Restaurant Depot carry live crawfish, when in season, in 30# sacks (+/- a few #). They get them in every Thursday, Friday and Saturday morning. The last sack I bought last season was $2.50#. I live in South Florida. Prior to that it was either ordering...
I've been that route with home improvement store smokers, vertical and off set, no propane. If I knew then that they were made of really thin material that required lots of fuel and much modification, I would have passed. Then I got smart. I bought a large BGE and I just recently added a Horizon...
What did you use for the steaming spices and liquid. There are somethings that should never be considered for smoking. IMO, most shellfish fall into that group. Oysters are great for smoking, clams and mussels, not so much.
My wife returned from a road trip to Mississippi last Thursday, making a stop at Kenny's Seafood in Slidell on Wednesday. 80# of river caught crawfish was on the way! I got everything ready to go for when she got home. Now, I only have a 42 quart pot, so I have to do them in batches. I use 1...
Dang papap, I didn't realize they were available this early. I'll have to check with my supplier and see if I can get some. You got my mouth watering now!
AJBert, my wife reminded me that we have had mushrooms in a boil at our daughters. My SIL is a registered coona$$. My daughter loves the...
