As to you temp problems, the nipple the probe is in is definetly a air leak, need to do something about that.
Lose the riser on your intake, don't work for chit.
Other than that, is your lid...
I'm wondering why are you brining an already cured ham???

Shouldn't need to close the exhaust.
Be sure to close the intakes and get the lid on tight but don't worry about the exhaust, it'll die out quickly.
I think drunk Pink left something else open.
