    And FYI, the water pan does not make your meat moist and juicy. It's just there to act as a heat sink.

    Where you at in Mi? Deckle off means its just a flat, no point. The rest is not important. I can get full packers (point attached) for $1.79/lb if your ever in the need. 2 bucks for a flat isin't bad unless it's trimmed of all the fat, then don't bother. Mesquite is my fav on brisket but...
