    Charcoal preference

    I use the alterative to Cowby.....it really is the same as it is manufactured in Allardt Tenn. about 25 miles from my home. ! only use it to get thre hickory up and roaring. 20# bags go for $7.00. I will use 4-5 #s at a wack. Since I cook only with hickory or apple I dont want to waste the time...

    Help with shoulder

    Damon, I find that if I make several slices of the hide length ways of the bone all the way around and then pour the rub to it and smoke it low and slow to an internal temp of 180-190 then let her rest till cool enough to pull the hide off and slice as wanted.... works for me.

    We are required to have a resturanters liscense and now since the first of Oct. need to be on wheels or a fixed building. We decided we wanted to stay in the mobile mode for a while longer as we are not ready for the resturant mode. The laws reuire one to have the normal 3 sink, a hand sink...
