i did some stuffed tenderloins last weekend....i have pics on my thread of it.....
but, i like to do provolone of course, i usually have some cheese i have smoked on hand that i will use....plus pepperoni, basil(so good), and pork seems to go well with fruits and what not, so i always add...
Ive been seein all these posts about pastrami the last few weeks. looks soooooo good, so think ill give it a shot this weekend. i plan on buying a store bought corned beef.....i dont really wanna take the time for curing, and corning and all that jazz....especially for first time.

the chimichanga and ice cream really scored me some points on the date i had over, especially the ice cream.....she was putty in my hands after that...lol....
the fried ice cream was real easy actually.....i had never done it before....
but
main thing...take it in steps
you take a glass dish and put it in freezer to keep ice cream cold.....then you scoop out however many "balls" you want. i formed them with my hand, about the size of golf balls...
just wanted to share some pics of my meals last week....looked pretty tasty.
i made some chimichangas with fried ice cream. i know its not really smoking, i did cook the hamburger in the skillet, on the grill to get a smoky flavor....just to make it count. haha. But they turned out wonderful...

ive been a member here a few weeks, posted in some areas, but didnt roll call.
im a weekend cooker who does catering on the side sometimes. i love smoked foods, and good beer to go with it. nothing like sitting round for hours anxiously waiting for all your work to pay off....good...
so, the bacon got smoked this weekend. i also did some cheese and nuts while at it.
turned out pretty good. i think i need a bigger prob belly next time.
