I know there are many ways of doing it, but this is really very easy and produces awesome brisket. Not only that, but it is faster than other methods. Just can't wait to do another.
Made up some sandwich meat for todays lunch. Mixed in some Sweet Baby Rays sauce, then microwaved at work and...
Like I said, this was my first packer. I don't see any reason to try any other method to cook brisket. Cooking at the higher temperature gets things done quicker which is a real benefit to me. The quality of the final product is outstanding. I lived in Dallas for a couple years and really...
That is another excellent suggestion. I turned my burner off today and the digital readout drops like a rock. I will set a low temp alarm next time.
I did turn the gas down with the needle valve so the flame was very low. I had to blow in it very hard to get it to go out. I also marked the...
It was foiled after 3 hours. Out of the smoker, I just let it sit with the foil cover for about 40 minutes. The took it out and started working on it.
Folks, I take no credit for this other than the fact that I can follow directions fairly well. This was in the smoker only 8 hours and 45...
OK, here we go. I got tied up right when I was supposed to pull it out, so it stayed in about 45 minutes longer than I planned. I did have a thermometer in it and it was over 200*, but I thought it was because I put the probe in the wrong spot. Maybe I should have trusted it.
Anyway, it pretty...
chrish, No problem at all. I was thinking about what you said before you said it, but it still doesn't hurt to have a reminder (lil slap in the face). I may not have thought about mentioning it to others, so you definitely did the right thing.
I am almost 43. My kids are.... daughter (4)...
chrish, thanks very much for posting and explaining your concern. I do have little kids, and I would definitely hate to have them see me in two pieces in the neighbor's yard or worse yet one of them get hurt.
I am doing a brisket tomorrow and will do a little playing around with the flame...
I kind of disagree with a couple things here. When I lived in Texas, I had a co-worker that went to dog fights and **** fights very regularly. Now, this was 15 years ago, but the impression that I got from him was that it is a very common thing in certain places. My guess is, in certain areas...
My goodness, I have only been here for 11 days and the site says I already "Know Enuf to be Dangerous!"!!!!
I have learned a TON, in this short period of time. Smoked some fatties, smoked some ribs and just made my first mod to my GOSM. I posted pics in the PROPANE section of the needle valve...
Apparently.......
The fittings were marked 1/4" to 1/8" and 1/8" to a 1/4". I assume that these dimensions are the ID of the hoses these fittings work for. I recommend you do what I did. Take the regulator and the needle valve with you.
OK, as I promised.
I have only been able to get my GOSM down to about 250* to 260* during the heat of the day (temps between 90* and 100*). So, as recommended in another thread, I purchased one of these.

When I went to install it, the...
SmokyOkie, that will go in my todo list.
But first things first and that means BRISKET! Hopefully I can find one tonight or tomorrow so I can smoke it on Saturday.
