Like many of you in the east I could not find tri-tip roast. I had seen a roast called a sirloin tip and wandered if it was the same cut. Today in Publix they had them labeled as sirloin tri-tip. Mine will go on the smoker tomorrow.

I have bought from www.gassmoker.com several times. It is in Alabama and the shipping is free. If I remember right its $1.50 a lb. They have hickory, oak, pecan, wild cherry, peach,walnut, and more that I don't remember.

As I understand it...with the draft exit at grate level it causes a rolling efect as the smoke first rises and then is pulled down to the lower exit vent. At lowes or home depot you can buy flashing which you can cut to size and roll and slip in your chimney'

I do butts just like chisoxjim and they come out great every time. Opening the smoker to spritz lets out too much heat in my opinion. I will spritz when I add wood chunks to the smoker sometimes but not always. Don't see any difference.

Thanks for the links. Just ordered a temp alarm. I had my freezer go out a couple of months ago and was lucky enough to find it before anything but the upermost layer thawed out. Hopefully the alarm will prefent a recourance.

Yes, you can smoke at a lower temp but you will not get a crispy skin. Once in the distant past someone posted that they had heard or read that if you rubed the skin with cornstarch it would crisp up at these lower temps. I have never tried this and havn't found anyone else who has. So don't...
