    I use my big kahuna or I build a fire in a corner away from the cooker in my offset. It doesn't take a lot of smoke for cheese.

    Yow I had the smoke daddy fired up big time to show the smoke. Because the grill doesn't really seal up I don't have to worry too much about too much smoke. The customer service was excellant with this product and it accents my grill much better then a smoke box. ( I have several of those also)...
