Best basic electric smoker for DIY PID install

Hey gang, I have decided to add another smoker to my collection, a PID based electric. I have read a lot about the MES models, they seem very popular and well built. I'm an electronics tech so I will be installing my own PID so no need to spend $$$ on ones already PID. Looking for...

    First Time with Bacon

I just started making bacon in January of this year and was guided by many of the same fine fellows who have helped you here. I ended up going with @DougE method and finalized my ratios at .25%#1 cure salt, 1.5% Kosher and 1-1.5% brown or Demarara sugar. I bought a little 500g scale and use a...

    Jerky thickness

Am I the only one who cuts it thinner? I use my meat slicer and cut about 1/8" think, brine for 2 days and dry for about 4-5 hours. I started by cutting thicker then pounding thinner but found it was an unnecessary step. Cheers

    My mortgage payoff celebration Brisket

I remember when there were 3 years left, then when it got to one year it all seemed possible and real. I made lump sum payments and double up payments for the last 2 years and that's what really helped. Good luck!

    My mortgage payoff celebration Brisket

Thanks! I too have contemplated a new house, well, bigger. I have 20 acres but only 1,000 sq' of house. Either rent this place and buy another, or add on 1,000 sq' and stay here. Here it is at 4 hours, 160*, smoker still cycling 220-240*. Cheers (happy hour in 3 hours)

    My mortgage payoff celebration Brisket

I haven't posted in a while so thought I would share this brisket smoke. I paid off my mortgage last week, yeah, it's all mine, and my son is here this weekend to celebrate with me and we decided a nice brisket dinner would be good. The official mortgage papers won't be here for a month or so...

Thanks guys, I suppose I'm am getting the hang of it, although the above got to 155* as it was a warm day and I had the probe in the largest piece, next time I'll probe the smallest. I think my fav is the BBB, I have found the CDN BB is too lean for my taste, good for pizza but not breakfast...

Pit Boss 820 auger motor...flopping all over the place, not mounted to anything

Hi Doug, Thanks for the help. The pellets are not damp but I was getting to the bottom of one bag and there were some "fluffy" ones in there. They became dust when I mixed them in the hopper. That is probably causing the binding, I just wasn't sure if the motor should be "mounted" on the frame...

Pit Boss 820 auger motor...flopping all over the place, not mounted to anything

Hi all, I have had the PB820 since Christmas (bought used) and found that the auger motor isn't fastened to anything, it is just sitting on the air tube box. I can feel it flopping around and sometimes it gets stuck and I have to wiggle the motor to free up the auger, not sure what is binding...

Who else has forgotten about meat on the smoker...for a week? Too funny.

It's when you leave it in the shop for 3 weeks and the "blue fuzz of death" starts climbing out of the cup...that's the part don't like.

Who else has forgotten about meat on the smoker...for a week? Too funny.

Last month I jumped into making bacon with both feet, I had 7 different varieties on the go in various stages of curing and smoking, tried to combine 2 or 3 slabs per smoking session then let them bloom in the fridge for a few days then have a slicing day. When I'm done smoking I shut down the...
