On the lowest setting the temp sets around 300 with the vent closed to keep the smoke in. If i open the vent it sits around 260. but all the smoke bellows out. Could i lower the valve on the tank and use less gas? Is there a problem with this?

I have some famous daves rub I'll use on one and some shoups bbq sauce which is a great local sauce that's not hot.
Just the regular pepper or the cayenne too? I want it too still have that good flavor. With the sauce I think removing most of the pepper would work. Maybe add a little more brown sugar.
