Well, I'm going to do the ribs this weekend, that's not up for debate. lol Whether or not I'll use a rub for something like a Caribbean Jerk is a different story.
As spicy as Caribbean Jerk sauce is, I think the rub would need to be heavy on the brown sugar and sweet.
Would you folks think this would be better with or without a rub? The sauces are pretty potent themselves and I'd think it'd be difficult to find a rub that's complimentary to that.
Currently waiting for a butcher up in Columbus to get back to me on price for some ribs.
Idea is to smoke them on the grill for a few hours and then baste them in the sauce for the last 45 or so. Most likely use some apple wood and Royal Oak charcoal stuff on the Weber.
I was thinking about this and figured I'd ask the experts - anyone tried one or more of Bdubs wing sauces on some ribs?
I'm thinking the Caribbean Jerk, Asian Zing or Honey BBQ would taste good.

My brother and I are itching to smoke ourselves a brisket. Only we're concerned about spending that much money on that much meat - a packer brisket.
So we went to Walmart to buy some burger for... burgers and saw they also sold just flats.
We thought that would be a good place to start and...
Thanks for the suggestions - my brother is actually studying to be a chef (he's going into his second year) and he really thought what he'd learned would help make these good - and we were expecting good stuff! But man, it just wasn't at all what I thought it'd be.

Price wise, I think this would be near the top of our range. Size... Something to fit on a small/medium sized deck with a Weber Kettle, something constructed well enough to endure living outside, feature wise I figure...
Interesting - I would have never thought to sub jam in for the actual berries. Also wouldn't have thought to pick fresh vs store bought.
What would the purpose of roasting the berries be?

How do results of smoking say... a brisket fare using the slow 'n sear vs a wood pellet smoker like the Davy? Are results comparable?

My recent experience trying to smoke some ribs for Father's Day showed me that while a Weber kettle grill is an amazing grill and versatile, there has to be a better way, especially keeping the temperature steady for those long smokes - for when we try a brisket!

So, we went to a local butcher to get some ribs - but they didn't have any. However, he said he'd cut some and let 'em sit overnight and we could come pick 'em...
It is a little daunting to see even their lower-priced RR Ranch 16oz Ribeye costing for one what I paid for 4 previously. lol
Let alone their 8oz Wagyu Ribeye Filets.
