I dont wrap my ribs very often. but when I do they are wrapped tight to keep in the moisture.

I second the smoke ahead of time route. I usually smoke an extra few racks so I can vacuum seal and freeze for quick ribs during the week. Just heat them indirect on the grill and add sauce if that is your thing. This route is perfect for your beach days or just dont have time and want ribs...
Depends on who you are cooking for. I leave beans on for hours rolling in hickory smoke.
No one has complained yet. :)
But the next day you can really smell the smoke. Taste is still good and not over powering.
