I have a question along these lines of cleaning... I seem to have a good buildup of creosote on the bottom of my water pan. It is fairly hard like tar. Is there a good way to remove that, or should I even worry about it?
The wife is thawing out a brisket that I had smoked some time ago. On it she had written "well done brisket". Now assuming this may translate to "dry brisket", what might my options be to "juice it up" to serve to family and friends on Christmas eve? I plan on slicing it for sandwiches.

If it were me, I would probably swap the top with the bottom at foil time only. If 4 shelves, I would swap 1 to 4 and 2 to 3, if 5 shelves I wouldn't move 3 and do 1 to 5 and 2 to 4.

For those of you who use sand in your water pan, do you also add water to the sand? If you do, just enough to moisten it or do you make it kind of soupy. Also, do you line your water pan with foil prior to putting sand in it?

This happened to me once with my big block. I discovered a spider had build a web inside the tube going to the burner and I guess the gas was overflowing back out the tube. Be sure to check that out first before doing anything else. I just blew mine out with air and it fixed the problem.
