    Smoking my first brisket, any suggestions?

    Brisket went in at 5am, love the smell of a smoker fire in the early am. My neighbors don't though, they wake up hungry hah.. Thanks for all the help though, ill keep you posted on how it goes. Didnt do anything special for the rub, just mustard, salt and pepper.

    I have had great luck with everything else I have smoked, but have never tried a brisket. I figure I will cook at 225, using a maverick et-733 to check temps. I figure ill pull it when internal temp hits 200. I've heard as far as a rub goes simple is better with brisket so I may just use salt...

    What's everyone doing for Mother's day dinner?

    I won't be smoking anything due to a busy day. But I picked up some fillets from the local butcher, they look wonderful. I'll be grilling those and asparagus, to go with lobster tail rissoto. The rissoto worries me a little as I have never prepared it. I may ask my girlfriend to tackle that.

    Thanks guys, I have a lot to learn, and I will always be trying to improve. But this was only the second time I have used my smoker, so i am happy with where im at so far. If i can get off work early I may yet a prime rib sometime this week.

    Thanks guys, I was happy with it, being the first I had ever done. The bark was great, but it was still so tender I doubt i ever try foiling it. Without reading these forums I never would have knew where to start, the info available and people here are incredible.

    Looks like I may have ruined the probe, it was above direct heat. A flare up may have put flame to the thermometer when I had walked away for a couple of minutes. It was my fault, looks like I will have to order a new probe. No big deal, but I won't have it for my pork butt tomorrow. Thanks...
