    AMNS cold smoking observation

Plus, if you buy Todd's dust in five pound lots, the shipping cost per pound is less and the cost per smoke is pretty reasonable.

    Where to find Wood?

Question -- would wood that has been through a chipper be ok to use in a smoker?  I've heard of problems with collecting sawdust from a chain saw that has oil on the blades.  Are the chipper blades (or whatever) lubricated with oil? A while back we had some tree work done, and afterwards I was...

First Spare Ribs with 3-2-1 method w/Qview

Looked good to me also.   I've not done the 3-2-1 on either ribs or pork butts before, but think I will give it a try.   I've made pastrami twice now, and both times had to finish it in foil in the oven because the heating coil connection went bad and needed fixing.  It certainly turned out nice...

    Oh No!!!

Sounds like you had some good karma going for you.   As was just said, pass that back to the sheriff & company with a big batch of pulled pork or the like.

30" MES Stainless - Black Friday SALE!

Also there is a significant difference between the 20070106 and the 20070910. The 0910 has an access panel for the heating coil connections and the 0106 does not. I don't know how you might specify which model you want from Amazon. Another source is Walmart. They are listing MES30 for $179, and...

    MES 30 or 40?

From the web searches I have done, there is no better price.  It is priced as much as $120 more at other places. Warning from a post just above -- it may not stay in stock.

Brisket - Where can I get one around Baltimore, Washington or Annapolis for around $2.00 a pound ?

I was in SysCo today.  It is a restaurant supply store open to the public.  Location is US route 1, south of route 100 by less than a mile -- on the right heading south, next to a flea market.  They have lots of good things and are worth putting on your radar if you live anywhere close by. ...

    Smokers For Soldiers

We just got an email from our son who is deployed in the middle east.  He said that all sorts of folks are coming by to borrow the measuring cups we sent him.  I wouldn't have thought they would have been that popular, but apparently so.

    MES 40 chip tray upgrade

    If they don't make the full size chip loader, and if you don't feel like trying to modify it -- others have suggested that you can use the half sized loader and just push it in only half way one time and all the way a second time.  Sounds like a plan to me:-}}

Now THAT'S a lot of cheese!  Do you have lots of friends and family, or are you stocking up for the winter:-}} What was your smoke method? Pictures?

Rookie needs help w/ first smoke

Something that I have done with pork loin is to lard it with garlic cloves.   Take a sharp knife and put slits into the loin, then push a garlic clove down into each one.  They should end up all the way inside the pork.   Gives a great flavor to the meat.

What should I buy - Bradley, Cookshack or something else?

Way back when I was looking to buy my MES30 four years ago, I looked at the Cookshack -- for about a minute.  The prices for the various models were way more than I wanted to spend for a smoker.  I've been happy with my MES30, despite having to do repairs to it (heating element connections...

    What makes a food-grade bucket a food-grade bucket?

I hope that when you are talking about putting a turkey in a bucket to brine, you intend to put it into a frig. I usually brine my ribs and pork butts in a large tupperware container.  Turkey is too big for them, and so I'll put it into a white kitchen bag with the brine, and then put the bag...

Day 1 for new member (me) and a beginner smoker (1 year) saying hi.

Hi and welcome. I like the AMNS and it is the way I went to allow cold smoking (e.g. cheese).  A friend of mine got a MES30 last summer.  It had the half sized chip tray, and he was unhappy with the lack of smoke when doing even warm smoking (150F) (e.g. jerky).  He got a smoke daddy, and his...

30" MES smoker is not smoking, 20070910.

An additional comment for others reading here -- if you are not getting what you need from customer service, sent a message (open or PM) to MBTechguy here on the forum.  He has been quite helpful to the folks here and has helped more than one to get things done.  The customer service person...

Need some quick help with new MES 40!

Sounds like it is working for you now.  That's good.  It might have been a defective controller.  Was it the remote or standard controller?  What was model number of your MES40?
  19. dale5351

    all MES model numbers

Thanks Ryan.  I missed seeing those two -- looked at the first few and last few and did not see the feature mentioned. I guess that maybe it is only those two models that have the remote and wheels? The model number listed at the closest Sam's to me is 20070810.

    AMNS is truly amazing

I don't know that smoker -- but would say to put it someplace where it is not going to be subject to a hot gas burner.  In addition to it burning too quick, it is possible that the heat might cause it to warp.  My guess would be that even if it is at the top, the smoke will get around and do its...
