Even better, store the dust in jars with lids. I use old Ocean Spray cran mix 64-ounce bottles. It is important to use dry dust. Todd recommends nuking it in microwave or oven for a little bit if it is exposed to high humidity.
Unless the insulation is exposed inside the box, I would say to keep it in place.
The MES is insulated, and that helps it maintain good even temperatures.

We have found combination kits of food saver bags at our local warehouse store (BJs) that are a much better buy than those in regular commercial stores, including Walmart. I don't remember the exact cost now, but if you have access to such a store you should look there for bags and bag rolls.
If you are lucky enough to have an access panel on the back of your MES to get to the wires on the heating element, you might even be able to spot the broken wire and fix it from there without taking the back panel off. My guess is that is where the problem happened -- those connections are...
