    I like the idea of putting all your veggies like that in your drip pan. I never remember to collect my drippings from brisket until it is too late. Keep us posted on the brisket. It sounds like it'll turn out real good. Also, I've never used oak before. Is it a bold smoke like hickory?

    No problem, we ended up eating a brunch at really good diner and found a local fire department having a BBQ chicken fundraiser. The chicken was really good and our money went to a good cause. Can't beat that! If I ever head up that way again I'll send you a message. Thanks!

    I find that it is easier to remove the membrane as a whole, rather than piece by piece by piece. Some ribs will be easier than others, but I have had my fair share of stubborn ribs before where it was a PITA to remove, but for the most part it isn't all that bad. Thanks for sharing the hot...

    All of the fat under the membrane will melt away as you smoke it. i fyou have a hard time pulling off the membrane, then use a paper towel to grab it with. That works best for me.

    I still can't believe that Weber still has not implemented handles on the center section. Just the other day I lost grip on the rim of the center section when I was lifting it off to change the charcoals... Almost lost the meat! I will definitely be modding mine with handles soon.

    Just read an article that Weber is bringing back the 14.5" Mini Smoker. It will have two small holes in the lid for temp probes. Those two holes are reported to make their way to the 18.5" and 22.5" models.

    Part #5 looks to be the Grate Support and Fasteners. You may be right about part #12 being a grommet eyelet. Looking at the manual for the current 22.5 and 18.5 WSMs the schematics and part lists lack that part.

    Peach, Alder, or Hickory?

    Thanks for the input, I was worried that the peach may be too light and did a 4:1 of Peach and hickory. Next time I will go all peach.

    About to smoke some butts tomorrow, baut I have only used hickory and apple wood before. I have been wanting to try peach, but don't know if I should go all peach or add hickory to it. Suggestions? I will be smoking on a 22.5 WMS with Kingsford original charcoal. Thanks in advance!
