Amen brother. I injected them with applewood smoke marinade, put some compound butter under the skin and some olive oil and Montreal chicken spice on the outside.
Thanks for the point sauced! I don't mind saying I was pretty nervous, this was the first time anybody had ever asked me to cook for them but everyone seemed happy with the results.
I just smoked 4 butts for a party. I smoked them on Friday, pulled them when they cooled, covered them in foil and put them in the fridge. Yesterday I put them in the oven at 275 with some of Chef JJ's finishing sauce. They came out great, good luck.
Thanks buddy and I think you're right, the cook is always his toughest critic. I would've given the wings a 3 because of the skin but I had people tell me they were some of the best wings they ever had so that was cool.
Everything went great today :sausage:. Saw folks going back for seconds and thirds. Wings were a big hit which was funny because I didn't like them lol, it started raining and I couldn't crisp up the skin as much as I like. The PP with Chef JJ' finishing sauce was very popular and the turkey...
Wings starting to come off. The turkey breasts have been in for about 45 mins.
I plan on warming up the PP in the oven at 275, should I get it to room temp before going in the oven or does it not matter?
Day two begins. I decided to just do everything here and then take it all to the party. First load of wings is in, after these come out I'll put in the two turkey breasts and the last of the wings.
