    Sunday Spares - QView!

And here is about 6 hours later.  I added the ribs tips to the baked beans (my first attempt at this) and they turned out pretty well. The ribs were a little on the dry/over cooked side as I had thought they were going to be.  I had them on longer than I wanted with company coming over.  Also...

    Sunday Spares - QView!

Alright laides and gents, here goes nothing (I only have two pictures, it isn't that extravegant!) I picked up some spares and a boston butt last week at Sam's Club and decided I was going to do the Spares on the WSM 18.5" this weekend.  What I thought would be a Saturday smoke turned into a...

    Sauce Question - I'm a newbie..

Alright So, my fiance and myself have a pretty good homemade dry rub that we use for our ribs.  It has some heat and some sweetness to it, but I'm looking to change it up a little bit for this weekend.  I figured since I will be outside all day Saturday, I might as well smoke up some ribs, but...

    First 2-2-1 QView!

I've never finished my ribs on the grill, but plenty here have.  2-2-1 will be perfect even with a small slab!  Make sure to toss some beer/apple juice/liquid of some sort in with the foiling!  They'll be superb!

    What smoker are you using?

Thawed out a boston butt, have a question

I never punctured the meat, I knew better!  I thought it would have been fine to smoke but I played it on the safe side and tossed it.  I guess I'll have to wait another week to light the smoker.  However, I have venison brats on the charcoal grill right now with some apple wood.  That way I...

Thawed out a boston butt, have a question

It was just paper wrapped from Fareway.  I ended up throwing it out and not smoking anything today.  I guess deer brats on the grill will have to do!

Thawed out a boston butt, have a question

Yep, it is finding the trash this morning.  Not to happy about my screw up!  Gonna be a long Sunday with nothing to do and nothing to smoke!

Thawed out a boston butt, have a question

The fiance already knows it was out all night.  And when I mean all night, I'm talking 8 hours in about a 60-63 degree house.  Before I knew about the 40-140 rule, I unthawed a butt in hot water in a sink all day before smoking it and no one got sick.  I still find it hard to believe that any...

Thawed out a boston butt, have a question

It still seemed frozen or close to it in the middle. Wouldnt cooking it to 205 kill any bacteria?

Thawed out a boston butt, have a question

I know everyone here pushes for 40-140 in 4 hours to kill bacteria.  My question is this, I sat out a pork butt last night on the counter, forgot about it, and realized it first thing this morning.   I have since put it in the fridge, I'm curious whether or not it will still be good?  Input?

Menu for Saturday - Stuffed Pork Loin - ideas? - **UPDATED WITH PICTURES...a month later!**

Updating with pictures...finally. As I said, the meat was mushy.  As a response to the previous post, I don't think these even sat for 5 hours before being smoked.  I'm not sure what the issue was, they looked great as you'll be able to see!  Both received a bacon wrap - mine was weaved and...
