    Ended up cheating a little at the end of the smoke and fired up the propane burner to keep the temperature up. Maintained it around 255* until it got to 135* IT. Seared on the grill then let itrest a little before slicing. Friends over for dinner were drooling, turned out prettydarn good...

    This is my favorite meat to put in my smoker. I use a Santa Maria style rub and oak for the smoke. I have about a 2 1/2 pounder in my smoker as i type.

    Doing a tri tip for dinner tonight. 1st time using only charcoal in my Masterbuilt Dual Fuel. Using Royal Oak lump and oak chunks. Finding a little charcoal produces a goodamount of heat. Rubbed and ready to go in.
