did you go off the temp gauge came with the smoker?The OK Joe was my 2nd smoker I bought and those temp gauges never work correctly. Better off buying a good digital thermometer, like a maverick.
Going to order a new Lang Friday morning cant decide between 48 or 60 trailer model.Currently I have a 120gal reverse flow homemade on trailer has bottom grate 48inch long so Lang 48 has cooking grate of 42 inch long, would that make huge difference?Only a few times Ive had it totally full owned...
I lowered stack half way down raised racks in firebox another inch or so used hand towels to temporarly seal door still can't figure why so much hotter I've tried level and raising smoker bubble ocer level. One pinwheel closed other wide open.
I have lang 36 and 120 gal reverseflow on trailer,should grease drain be open while cooking does it make any difference? My trailer grease drain under plate not like lang drain from top plate.
