    ECB Mods--obvious improvement

Scott- Ben found most of the mods on this site http://www.randyq.addr.com/ecb/ecbmods.html The only exception being the damper that he described. I'm afraid we don't have any pictures to post at the moment but I'll try and remeber to snap a few the next time we use it. I wouldn't resort to...

Scale for how much to feed a group?

I always figure about a 1/4 to 1/2 lb. per person will do the trick. Of course this is when I'm serving lots of sides as well. If it's just the meat and if your feeding a group that you know can pack it away I suppose a lb. per person would be a safe bet and then you'd probably have lots of...

    Smoked three things this week

I once had a deer throw itself at my stopped car! I was driving on the outskirsts of College Station many years ago and saw this little doe on the side of the access road so I slowed down. It started to come out into the road so I stoped and dimmed my lights. And then the deer threw itself at...

    Baked Potato Hash

A fattie is a bulk roll of sausage like Jimmy Dean. Just unwrap it and throw it in the smoker for about three hours to cook it, then crumble and use as you normally would. Very tasty!

    Affordable Quality Cutlery

I have a pretty short list of knives that I would not be able to live without. They are both from the Pampered Chef (I sell it so I buy it). One is a large 8" Chefs knife and the other is a 5" utility knife. I have yet to come across a kitchen situation that these two knives can't handle...

    Women Who Read

As a woman who reads I must say that this is 100% true. Head the advice of the story it will save you from many unnecassary arguments that you will only eventually lose with your significant other. In fact I'm pretty sure that woman are just right all of the time weather they read or not, lol...

    Questions

They refer to time amounts when cooking ribs. For instance 3-2-1 means 3 hours on the smoker, 2 hours wrapped in foil braising in liquid (apple juice usually) then 1 hour uncovered again to firm up. There are variations, the 2-2-1 you mentioned is used alot for spare ribs. That first number...

    Smoking Turkey

ECB stands for "El Chepo Brinkman", it's their small bullet type smoker. You'll be fine with cutting it in half or quartering it as salmonclubber suggested. I hope it turns out well for you.

    It's a good thing we ain't grilling!!

It's my belife that you have to look at these studies with a grain of salt. They were probably feeding the rats a straight chemical in large doses in order to get the results that they did (cancer showing up in 8 weeks is a pretty short timetable). We've been eating it in low quantities over...
