Have been craving pulled pork so I got an 8 1/2 pound, bone in butt. Rubbed and in the fridge overnight and into the smoker at 10:00 this morning. Smoking with hickory and apple chips/chunks at about 240* F.
Into the Smoke Hollow she goes.
I have been smoking for a couple years now, so decided it was time to try a brisket. I did make a couple rookie mistakes, trimmed way too much fat cap off and over cooked it a bit, but everyone that ate said it tasted great.

Seems I have made ribs for the last couple of Memorial Days, today was no different. First ribs since I got the Smoke Hollow, really pleases with this smoker so far.
Rubbed with modified Jeff's Rub and a little Tony Chachere's creole seasoning.
