I just purchased Jeff's rub so I am really excited to try it. The meat has only been on for about an hour but I will be sure to post pics of the final product.
I'm using hickory and apple chunks for the smoke. It is smelling great so far!

I was hoping to use the 3-2-1 method on these but am worried about over cooking them due to their size (already being pre-cut and smaller
What is everyone's thoughts? Do I need to adjust the cook time to a 2-2-1 or should I be good to go...
Going with 2 whole chickens and beef ribs. I have the birds in a brine and ordered Jeff's rub recipe. Going to make the rub and BBQ sauce tonight and and rub it down in the morning.

I usually do fat side up but I also trim most of the fat cap off before I rub it down. You'll end up trimming the fat off eventually and I find it is much easier to do before it is cooked. A pork butt has enough fat running through it you shouldn't have a problem with keeping it moist...
After golfing all day I've finally got around to posting the corned beef burnt ends I smoked up yesterday. I think they turned out pretty good.
Was sneaking them off the grill as they were finishing cooking, we're pretty tasty.
Might not look like much, but the whole meal turned out great...
