    Not liking my wings

Ok, I love wings. I've grilled them. I've used a vortex. I've smoked them. The meat always comes out great. What I am having a problem with is, the seasoning and sauce. I make a great sauce. I've made great rubs. What I don't like is the taste of chili powder which is in my rub and sauce. I like...

    New smoker coming

I'm still waiting for my LSG, 20x36 offset. The waiting game sucks but I think it will be well worth the wait.

Considering Loan Star Grillz offset, but need advice.

I have the LSG 20x36 on order. Probably won't get it till December. I can't stand the wait but I bet it will be worth it.

    Lonestar offset

Well I ordered a lonestar offset smoker, 20x36. I won't get it until maybe December. This is killing me to have to wait so long. I have purchased some pin oak and started splitting it, stacking it. Hopefully it will season out well for this spring. Oh I'm so impatient.

    Best wings I have done

I couldn't get the cornstarch on thin enough. But I read someone said to add it to the rub before applying. I bet that would help a lot.

    Best wings I have done

I tried the cornstarch before. The skin was nice but the taste of cornstarch I couldn't get rid of. So I tried baking powder. It was better. Could not taste it. But still I'm preferring not to use either. I think the trick is to make sure the wings have enough time to dry in the fridge and the...

    Dry turkey brine questions

There are 100's of ways to smoke or grill a turkey. What I do is: Make sure your turkey is thawed completely. Spatchcock it. Salt it top and bottom the day before. Season it with a mixture of your seasoning and olive oil. Top, bottom, and under the skin. Smoke or grill indirect at 325 until...
