    Rib Racks?

    I use them in my primo xl, if I'm cooking more then 4 racks. I can get 7 racks with the holder I have. That's the only advantage that I see. They are a pain in the butt if you foil the ribs, they tend to scrape off the rub when taking them in and out of the rack and it's one more thing to wash...

    No Smoke...Help!

    Ditch the wood pan that came with the smoker. I used stainless bolts to make legs for my skillet, works great. Pics of my mods on page 4 of this thread. http://www.smokingmeatforums.com/t/99373/masterbuild-xl-mods-post-your-mods-here . My set up starts smoke rolling after 10-15 min of lighting.

    You might have smoked too long. I usually smoke cheese only about 1 hour for a milder flavor- 1.5 hours for a heavy flavor. I've had great luck with hickory chunks, even tastes great right out of the smoker.
