    I usually do 3 1/2 -4 1/2 hrs and flip it every 45min. The black label extra sharp cheddar is the best, I have family members that will drop,off 2 bricks at my house. I get to keep one for every brick I smoke, they usually get opened within a week and disappear quickly. I stashed one at my moms...

    The damper was located to low and was to small. I ended up using a dremmel and some tin snips. It doesn't have to be pretty because the starter connection has 1/4 flange. It works great, It was 61 degrees out side and my cold smoke never got above 90 degrees. Before the mod I couldn't do cheese...
