My first smoker is made out of plywood, and like chilefarmer I burn gas and use a cast iron pot for smoke.
I've never pushed her to 350*F in fear of the glue in the plys weakening.
I don't think charcoal would be a safe alternative to gas or electric heat source.

1) Save your a-maze-n for cold smoking, get a cast iron pan with a lid and drill holes in the lid. Place over your burner.

I chop saw my firewood to "fist" size before a smoke. Then I get a roaring fire going with normal (13") splits.
I knock the coals down when my CC gets to about 350*F, spray clean the inside
knocking the temp down to 275*F then start cooking and throw "fist" chunks to maintain...

I've had my Lang 36 for 4 months now. I will try to give you some input to your questions.
1) The answer Ben Lang gave me "...if you are going to cook away from a kitchen (remote site) then get the deluxe for sides".
2) My top rack slides out...I think all 36"s now have a slide out...
