    My Beef Rib- First Timer

They look great! Excellent job. I am hoping to throw some beef ribs on this weekend if the wife will let me. We have been on a pork kick for far too long.

What is going on with SMF lately?

One of the inevitable things about forums is eventually a younger crowd comes in and they do not have the tact that many of the more seasoned users use when posting messages. I am a young-ish person myself ( 30, ok so not really too young ) and quite often I find that I may say something in a...

Question about Maximizing Bark on my Butts

Hog Warden, That is a good point. I guess it is more for the cook's spoils than anything. If the wife didn't stop me there'd be no bark left when I am done pulling. :)

Question about Maximizing Bark on my Butts

Thanks Fire it up & Dutch. I will for sure try the foil and pan way next time. I will also try mixing the rub up with some more brown sugar which would be a play on Fire it up's suggestion. I promised myself I wouldn't attempt to mix up my own rub until I purchase the recipes to help...

Question about Maximizing Bark on my Butts

I have been looking at everyone's q-views for their butts and have noticed that some people end up with a, for lack of a better word, *drier* and thicker bark than I normally do. I pretty much stick by the basic butt smoke over in the sticky section...

Can't wait to see updated pics on this. A friend of mine was wanting to convert his upright to propane, this might help him.

    Having Big Problems

My process started at 1am. This included getting the smoker rolling and fully heated to 300, tuning it down and getting it set at 225. Getting the meat ready and all that good stuff. In my haste of dealing with the problem I didn't go into all the details on that part. As of right now, no...

    Having Big Problems

I'm sorry the wife had me so busy I completely forgot to post back. They came out great and I got cheers from everyone. I don't have the pictures with me here at work, but I hope that I can get them up tonight. I really want to thank everyone in the community again that helped me, and so...

    Having Big Problems

Turned her into the wind as described and move the truck to make a makeshift wind block. She's cooking like a champ now. I pushed foil up into the spaces between the lid, I have the SNP that has the 1/2 barrel lid instead of the one with the normal style door on it, so it was fairly easy to...

    Having Big Problems

I am working on a windbreak now. I had turned the firebox away from the wind which might be the problem now. It is like this ( sorry for the crude text drawing ) <-<-wind<-<- (firebox)[smoke chamber] <-<-wind<-<- So I need to turn the smoker completely around? so the wind is blowing into...

    Having Big Problems

During normal conditions I have never had a problem holding temperature, it is the 20m gusts killing me.

    Having Big Problems

All of the vents are fully open. The fire isn't smothering it's burning quick. The leaks in the smoker are whats keeping the heat out of the chamber I believe.

    Having Big Problems

Started 3 7lb butts this morning around 1am, they are just now at 140 & 120(x2). The wind has picked up enough that I can't keep the smoker at 225, I keep adding full lit stacks of charcoal but that just keeps it about 200 in the chamber. Changing the orientation of the smoker has not helped...

    Only days 1 & 2 again...

I have signed up for the 5 day e-course previously and only received days 1 & 2 so I signed up again and still only got the first two days. Checked spam and nothing there either. Going to try for a third time I guess unless someone has a better plan for me. Thanks,
