Reference guide for Woods used to Smoke Food
ACACIA - these trees are in the same family as mesquite. When burned in a smoker, acacia has a flavor similar to mesquite but not quite as heavy...
Here is something I saved from b4 the crash.

Dr Chickens Double Smoked Ham
Dr Chicken is a friend of mine that over a period of years came up with this recipe.
Ham should be a fully cooked or partially cooked 1/2 shank variety or can be shoulder...
I have the 30" and am very happy with it.
In fact, I'm going to use it this afternoon.
The 30" is just fine for us 2 and occasional company.
Many people here prefer the 40" because it holds more.
If you are planning on smoking for large crowds, you might like the 40"
The glass door is OK if...
I don't think you will be happy running a 220 volt kitchen stove on 110 volts.
When you drop the voltage by half, you don't get just half the heat.
You get one quarter the heat. Darn!
Do the math. Ohm's law and all that stuff.
P=IE Power = Current times Voltage.
How do I know? I tried it.
Spring not here yet. Cold outside. Smokin' inside in the fireplace.

Works great!

I never soak the wood chips.
I use about 1/2 handful of chips at a time.
I always start smoking at 160F.
That produces good TBS smoke...
This is Kretchmar brand ham, sliced and smoked 5 hours on Brinkmann, vertical smoker at 200 degrees. I used hickory. It is pre-cooked so you are just looking to smoke it. Watch it carefully toward the end so that it doesn't dry out.
Here it is on the kitchen table. Drop a chunk of this in...

I am planning to purchase a mes (Masterbuilt Electric Smoker) in a few days.
Am wondering whether to get the black or stainless steel model.
1) Of course, there is the price difference.
2) I read that the black one will get warm in the hot sun.
3) I suppose the SS is easier to clean. But...
This will show one way to convert a Brinkmann Vertical Charcoal smoker to electric at nearly Zero cost.
1) Acquire an electric range that is headed for the dump. Most ranges are for 220 volts. That's OK.
Appliance dealers / repair shops will probably give it to you, if you explain...
