    That's a very risky way to handle a chain saw. You don't really have full control and if the saw kicks, the blade can go where you really don't want it to go.

    One of the benefits of pickling fish is that the vinegar dissolves the tiny bones. I wonder if adding vinegar to the brine would help with that (before smoking?) -walt

    That would not surprise me. It's not a named cut that you would find on the charts so (for all I know) it could be any part of the pig that is meat and not readily identifiable as something else. Tastes good and that's what matters to me. -walt
