    Anyone have a tutorial on stuffing sausage?  From the casing selection to the tools used?  I am a little reluctant to admit but I am part Italian and have never done this!  My Grandmother would be really disappointed! HAHA

    Looks awesome. Going to try that for the lil lady on valentines.  POINTS!  RIGHT??? Who's with me?  HAHA.  Ok so my 2 cents... I think you need to get another tie down for that smoker.... You never know when it might jump off the porch (you must get high winds or earthquakes)....HAHA.

    In the future, not sure how much the shipper was, but try 3pl with Fastenal.  They might save you a buck and are great when it comes to protecting product.

    So I was checking out the photo section.  Saw someone using a MES 40 with external thermometers running "through" the door opening.  Wouldn't that damage the seal?  I run mine through the vent openings on top of the unit.  Just curious on everyones thought.

    I am with AL on this one.  There is no way that just fell.  My guess, it got hit with a fork lift  or was dropped from a loading dock.  Thats crap!

    What am I doing wrong with brisket?

    SXFX.  LOOKS GOOD!  I think that looks perfect.  I want the meat to just "fall apart" with a light pull.  Thats what I understand brisket to be.
