Welcome. As a new smoker as well, my advice would be to buy thermometers right away. One to monitor your pit temperature, the other to monitor the internal temperature of the meat you are cooking.
Smoking chickens is a good way to learn your pit. And cheap. Butterfly them and smoke at a high...
Hi, Dave. Lots of good advice here. I certainly learned a lot.
First thing for a beginner: buy thermometers. IMHO, controlling the temperature of your pit and monitoring the internal temperature of your cook is more important to good results than anything else. Thermometers turned mu good BBQ...
TexasRob, I think you'll like it. Mine is easy to control and holds the temperature steady. It has cranked out some really good BBQ.
There's lots of tips out there for the WSM. Try them all.
Foamheart's advice is spot on, IMHO. I spent all spring and summer smoking chickens. It's a great way to learn your smoker. And tasty, too! For me it was all about learning to control temperature. The more consistent the temperature, the beet off you are. The Weber Smokey Mountain has spoiled...
I would have to disagree. We have great barbecue in California because of the great mixing of world cultures in California. Hey, it Harry Soo who won the first season of BBQ Pitmasters on TV.
But like music, it's all good, country wide. It's the cook, not the location. And if that location is a...
Joe, it was great. I took it off after 17 hours and an IT of 200. The bark was incredibly good, nice smoke ring and it pulled effortlessly. Actually had trouble getting it off the grate in one piece.
The bag of Stubb's was more than enough fuel. The WSM is really amazing. It held a temp of...
Having a small dinner tonight. Last night about 10:30 I threw on my first whole butt. The butcher trimmed it before weighing and it is about 8.5 pounds. I figured 16 hours at 225 in my WSM. Used a full bag of Stubb's briquets Minion style. 13 hours into the cook still going strong. My WSM seems...
Noobie here. I have an 18.5. The door always worked OK for me, although I did buy the Cajun Bandit replacement door. It is a bit sturdier, doesn't seem to seal any better.
I did my first smokes, chickens and babybacks, using just the stock thermometer in the dome. Not trusting it I purchased a...
bigtex, research the mods people make to their ECBs. The main problem is the charcoal gets smothered by the ash as the briquets burn. It's OK for chicken, as chicken cooks quickly, but for ribs, etc. you'll want to go low and slow and the unmodified ECB seems to like to go high and fast.
Good luck!
Welcome, Gary. I purchased a Weber Smokey Mountain smoker hoping to improve on my unmodified ECB, but that ECB makes absolutely the best smoked chicken ever.
Good luck with your smoking, you're going to really enjoy it.
