    Vacuum vs 24-Hour Frig Marinating

When you vacuum seal, do you keep it in the frig overnight? The last batch of jerky I made was vacuum sealed for 1 1/2 hours. It tasted just as good as an overnight marinade.

    Vacuum vs 24-Hour Frig Marinating

Anybody do a comparison of a vacuum vs non-vacuum marinating session? I have a JVR Vac100 chamber sealer and have done a couple of hour-long marinading sessions --not 24 hours -- with good results. But....I would like to know if there is a difference between marinating in a vacuum vs a 24-hour...

    Dry Brine Turkey

I was thinking of dry brining my turkey this year. I saw one short video of using kosher salt along with baking soda. The baking soda is supposed to tighten the skin. Has anyone tried this? Thanks

    Disappointed in Camp Chef

Agaian, thank you guys for your feedback. The CC really holds temperature and provides good smoke. The results have been excellent and the grill is sturdy. No complaints except the controller. My wife's iphone is a newer model. I'll try it for the nex few smokes.

But doesn't it piss you off when you pay for something and it doesn't work?

    Disappointed in Camp Chef

Thank you guys. Appreciate the feedback. I'm looking at the Lone Star Grillz. Everything is made in the US. Anyone have one?

    Disappointed in Camp Chef

I think you're right. I delete the app from my iphone then reload it, and it works -- at least for the current smoke. Then I have to do it for the next, then the next, etc. I called CC, but didn't have any satisfaction. Was just told it might be the firmware but they didn't have any idea when...

    Disappointed in Camp Chef

I've had my CC for over 2 years and have had over 150 sessions. A couple of weeks ago, I had to reboot the controller because it wouldn't hook up to my WiFi and it didn't record the session (Graph). It did so for the session, but failed on the next -- yesterday. I called today to relate the...

    Picana?

I've smoked 7-8 picanhas, Choice, Prime and Wagyu, all with the fat cap. All the grades were good, but this is a pretty lean cut, but found that more marbling was only marginally better. The seared fat cap added a lot to the taste. Using a Camp Chef pellet smoker, I started off at LS (Low temp...

    Behemoth Beef Ribs

Saw the 2019 price on your Dinos. Costco didn't have them, so I paid $13/lb for Choice dinos at a local meat market. You've taken the time to do a lot of interesting things that I've enjoyed going through. Thanks.

First Time Smoked Dino Beef Ribs

I wanted to smoke a couple of sides of beef back ribs, but couldn't find them at a couple of my meat sources. So, I opted for Dino (Plate) ribs which are from the front of the rib cage and are very meaty. I used Jeff's recipe for these as a guide, but varied a bit -- maple syrup as a binder and...

Twice Cooked Picanha over Open Fire

I've now smoked several picanhas -- one last night which was dry brined overnight. Using my CC Woodwind and a smoke tube, I Low Smoked it for an hour then turned up the heat to 275F, per, more or less, Jeff's recipe. I took it off at 115F internal and put it on a gas grill which was about 700F...

    drying out clumpy spices

Wasn't offensive at all. I live in Southern CA, but when I used to buy rubs, none ever clumped up. I like this forum because there's always a lot of friendly and helpful commenting -- including yours.

Since he sells his rubs, I thought that whatever he does to eliminate the clumps might shed a different light on the subject.

I see all the replies for a problem I have when I make Jeff's rubs. If Jeff gets to these threads, I'd like to know how he eliminate the problem. Thanks.

Wood Chips with Pellets, anyone tried this?

Thank you guys. Appreciate the advice. BTW, just smoked a Picanha for the first time following Jeff's recipe, and it turned out perfectly medium rare. It is a very tasty piece of meat.
